For high schools determining the number of items required for the day can be quite tricky. It is dependent on who is in the school, weather, time of year and more. Whilst you don’t want to run out of food you also don’t want to have too much wastage. Some schools mark down items at the last of the break. This can means some students wait for that and that can impact sales. Most schools choose not to do mark downs. If it is not fit for full price sale then it should not be sold. If your high school does breakfast then a good way to go is in the middle break, make up the next days toastie or brekky wraps ready to go in the morning. If you run out of food too early at lunch you can go and quickly toast some of them up. If you don’t run out too early then you are ahead of schedule for breakfast!
Remember if you do mark items down it will need to be recorded. You will also need a P&C approved mark down policy.
Note- Brekky wraps are lavash bread with ham and cheese toasted. Usually cut in half and sold for $2 per half
