We would like to encourage other tuckshops to make the change to "green" choices with the support of Smart Schools.
We took over our tuckshop seven years ago, the equipment was a pair of tongs and a saucepan for the Cheerios, a wooden spoon, a domestic stove and pie warmers.The menu comprised of processed manufactured packets our of the freezer into the warmer. This was accompanied by six different flavours of chips and six different types of fizzy drinks.
We changed it in a heartbeat to homemade everything apart from bread and tortillas.
We also make a profit.
We steam chicken breasts which we buy on sale for $5.99 kg. Packaged cooked chicken costs $22kg.
We buy a leg of ham from the butcher and slice it. This costs $10.99kg as opposed to $24.
We buy our vegetables weekly from a market, immeasurably cheaper than supermarkets.
We buy our potatoes from the farm @ 90 cents kg. Think of supermarket prices!
Our local butcher provides the rest of our meat far cheaper than the supermarkets and bulk wholesaler and we are assured of the quality.
Block cheese costs $6.40kg from the supermarket. We grate it. That is half the price of ready grated cheese.
We make mini pizzas from English muffins, homemade pizza sauce, the ham offcuts, fresh pineapple topped with the grated cheese.
We bake biscuits and make a 75% profit on each one.
These are our cost saving ideas that take hardly any time at all.
Yes, it is labour intensive, but we cook in bulk, freeze in portions.
